Chef’s Table With Shaun Hergatt & Jason Galang


Fall has arrived in New York, bringing color to the trees and a brisk breeze to the city streets. When cold temperatures bear down on the city, New Yorkers and visitors alike seek warmth in comforting cuisine. Juni – a boutique restaurant at Hotel Chandler – is an ideal destination for those looking for an intimate and comfortable dining experience, thanks to the impassioned and professional cooking of executive chef Shaun Hergatt.

We recently spoke with chef Hergatt about the menus at Juni, asking him to choose the dish that best suits the season. Hergatt’s choice, the Montauk Striper – Nasturtium Emulsion – Mint Oil, is a locally sourced favorite that pairs Long Island’s signature striped bass with an autumnal Nasturtium Emulsion and the bold flavor of mint oil.

“The dish integrates with the artwork in the dining room,” Hergatt said. “And the components of the plate all work to complement each other to create a great flavor profile.”

As for a drink to pair with Juni’s Montauk Striper – look no further than the 2010 Domaine Jean-Pierre Dutron ‘Tres Vieilles Vignes’ Pouilly Fuisse White Burgundy, at the recommendation of sommelier Jason Galang. This crisp white wine, from the Mâconnais district – within the Burgundy wine region of France – is the perfect match for Hergatt’s complex Striper entrée.

“The Pouilly Fuisse is a crisp White Burgundy with bright yellow fruit notes, rich structure, and a clean round mineral finish to go along with the intricate flavors of the Nasturtium emulsion and texture of the striped bass dish.”

The History and Architecture of Our Beaux-Arts Hotel

As a historic building that has survived multiple uses throughout the decades, Hotel Chandler embodies New York City’s continually evolving character. Constructed more than a century ago, the building has hosted famous guests and stood as an architectural gem in the heart of Manhattan. The hotel features an array of contemporary comforts encased in a beautiful Beaux-Arts package – an authentic iron spiral staircase, original limestone façade and ornate carvings complement new additions and updates.

Artfully Updated Design Elements

Each of Hotel Chandler’s 12 floors recently underwent a full revitalization by designer Jane Capellini. The hotel’s updated design motif features elements meant to emphasize discovery. A mangrove tree root lamp set, 18th-century clock hands, limestone flooring and oak-paneled walls lend Hotel Chandler’s public spaces a calming-yet-adventurous aura. A mixture of furniture, light fixtures and textures come together in seamless and unexpected ways to create a cohesive feel and uniquely New York flavor.

The hotel’s recent renovation left plenty of room to showcase the hotel’s rich history. Many of the property’s original features have been incorporated into the new design to create a strong sense of place and era. The hotel lobby still prominently features the 1905 spiral staircase original to the building, and the Chandler Suites feature restored lion’s head fireplaces. These elements come together to create a tranquil oasis in the heart of America’s busiest city.

Hotel Chandler’s limestone façade, which dates back more than a century, has been restored to match its original state. The building’s Beaux-Arts details blend into the natural flow of the city but stand out as beautifully unique upon closer inspection.

A Rich History

In its earliest iteration, Hotel Chandler was known as Hotel Le Marquis. Built in 1905 by architects Buchman & Fox, who also designed the Sherry-Netherland Hotel, the hotel featured staying rooms with separate chambers, parlors, closets and bathrooms. The hotel’s most famous guest was business mogul Leona Helmsley, just one of many colorful characters to call the building home throughout the years.

Hotel Chandler was acquired by Triumph Hotels, which was originally founded in 1951 by the Horn family. Triumph Hotels currently operates six hotels in Manhattan, offering modern luxury, historic detail and warm personal service in the heart of the city.
